The fire crackles and the coffee from the local roastery stands clear above the flames. We start by filling the depots a little, with delicious cake and hot campfire coffee, prepared in true cowboy fashion, because before the big campfire dinner is ready, the fires have to be worked on. You have to gather herbs, chop firewood, keep the fires going, prepare the delicious local ingredients and prepare the seasonal dishes for appetizing portions. You have to have your eyes with you on the harvesting trip, because even the smallest thyme plants, green shoots or the horror of the kitchen garden – the scallion cabbage – can become gastronomic shooting stars. The menu and ingredients are determined by the season and what is available from Karpenhøj's local suppliers, and together we smoke, fry and cook, so that in the end we can enjoy a tasty meal as a result of a joint effort and a pleasant day in nature.
